Mushroom Corn Basil Stuffed Omelette Recipe

Ingredients

– 4 large eggs
– 100 ml milk
– 1 cup mushrooms, chopped
– 1 cup corn kernels
– 1/4 cup fresh basil, chopped
– 1 small onion, finely chopped
– 1 tablespoon oil
– Salt, to taste
– Pepper, to taste
– Grated cheese, optional

Method

1. Heat oil in a pan over medium heat. Add onions and cook until soft.
2. Stir in chopped mushrooms and corn. Cook for about 5 minutes until mushrooms are tender.
3. Add basil, salt, and pepper to the mixture. Mix well, then turn off heat.
4. In a bowl, whisk eggs with milk. Season with a little salt and pepper.
5. Pour half the egg mixture into the same pan, then add the vegetable mix. Cover with remaining egg mixture. Cook until eggs are set, about 3-4 minutes. If desired, sprinkle cheese on top before serving.
