Ingredients
– 1 cup cashews
– 1 tablespoon oil
– 1 medium onion, chopped
– 1 medium tomato, chopped
– 1 teaspoon ginger-garlic paste
– 1 teaspoon red chili powder
– 1 teaspoon garam masala
– 200 ml coconut milk
– Salt to taste
– Fresh coriander for garnish
Method
1. Heat oil in a pan over medium heat. Add the chopped onion and sauté until golden brown.
2. Stir in the ginger-garlic paste and cook for a minute until fragrant.
3. Add the chopped tomato, red chili powder, and salt. Cook until the tomatoes are soft.
4. Mix in the cashews and coconut milk. Let it simmer for about 10 minutes.
5. Sprinkle garam masala before serving. Garnish with fresh coriander.
