Delicious Mulakootal Recipe: Vegetables In Coconut Gravy Delight

Ingredients

– 2 cups assorted vegetables (like carrots, beans, and potatoes)
– 1 cup grated coconut
– 3 cups water
– 1 teaspoon mustard seeds
– 1 teaspoon cumin seeds
– 2 green chilies, slit
– 1 tablespoon oil
– Salt to taste
– 2 sprigs curry leaves
– 1/2 teaspoon turmeric powder

Method

1. Start by chopping the vegetables into small pieces.
2. Heat oil in a pot, then add mustard seeds and cumin seeds. Wait for them to splutter.
3. Add curry leaves and green chilies. Stir for about 30 seconds until fragrant.
4. Put in the chopped vegetables along with turmeric and salt. Mix everything well.
5. Pour in the water, cover the pot, and let it cook for about 15 minutes until the vegetables are tender. Afterward, mix in the grated coconut and cook for an additional 5 minutes.
