Mulakootal: Vegetables in Coconut Gravy
Ingredients
1 cup mixed vegetables (carrots, green beans, and potatoes)
1 cup diced pumpkin
1 cup coconut milk
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1 teaspoon turmeric powder
2 green chilies, slit
1 tablespoon coconut oil
Salt to taste
Fresh coriander leaves for garnish
Method
1. Start by boiling the mixed vegetables and pumpkin in a pot with water until they are tender. This may take around 10 minutes.
2. Heat coconut oil in a pan over medium heat. Add mustard seeds and cumin seeds. Wait for them to crackle.
3. Stir in the turmeric powder and green chilies. Cook for one minute to release the flavors.
4. Pour in the cooked vegetables along with the coconut milk. Add salt and let it simmer for about 5 minutes.
5. Garnish with fresh coriander leaves before serving. Enjoy your delicious mulakootal with rice or flatbread.
