Moroccan Zucchini Boats Recipe
Ingredients
– 4 medium zucchini
– 250 g minced lamb
– 1 small onion, chopped
– 2 cloves garlic, minced
– 1 tsp ground cumin
– 1 tsp paprika
– 400 g canned tomatoes, chopped
– 1 cup cooked couscous
– 1/2 cup feta cheese, crumbled
– Fresh parsley, for garnish
Method
1. Preheat your oven to 190°C (375°F). Slice the zucchini in half lengthwise and scoop out some flesh to create boats.
2. Heat a large pan over medium heat. Add the onion and garlic, cooking until softened, about 3 minutes.
3. Stir in the minced lamb. Cook until browned, breaking it apart as it cooks. Add cumin and paprika, mixing well.
4. Pour in the chopped tomatoes and cooked couscous. Let the mixture simmer for around 5 minutes to combine flavours.
5. Fill each zucchini boat with the lamb mixture. Place them on a baking tray and sprinkle feta cheese on top. Bake for 25 minutes or until the zucchini is tender.
