Ingredients
– 4 large eggs
– 400 ml diced tomatoes (canned)
– 1 medium onion, chopped
– 2 cloves garlic, minced
– 1 tsp ground cumin
– 1 tsp paprika
– 1 tsp chili powder
– 1 cup spinach leaves (fresh)
– 2 tbsp olive oil
– Salt and pepper to taste
Method
1. Heat olive oil in a frying pan over medium heat.
2. Add the chopped onion and minced garlic, cooking until soft.
3. Stir in the canned tomatoes, cumin, paprika, and chili powder. Season with salt and pepper.
4. Simmer the mixture for about 5 minutes. Then, stir in the spinach until wilted.
5. Create small wells in the mixture and crack the eggs into these spaces. Cover the pan, cooking until the eggs set to your liking.
