Delicious Moroccan Chicken Salad With Blood Orange And Feta

Ingredients

– 4 chicken breasts (about 500g)
– 2 tablespoons olive oil
– 1 teaspoon ground cumin
– 1 teaspoon ground coriander
– Salt and pepper to taste
– 2 blood oranges (or navel oranges)
– 120g feta cheese
– 1 small red onion
– 100g baby spinach
– ½ cup walnuts

Method

1. Preheat the oven to 200°C. Season the chicken breasts with olive oil, cumin, coriander, salt, and pepper.
2. Place the chicken on a baking tray and cook in the oven for about 20-25 minutes, until fully cooked.
3. While the chicken is cooking, slice the blood oranges and crumble the feta cheese.
4. Thinly slice the red onion and chop the walnuts into small pieces.
5. Once the chicken is cooked, let it cool for a few minutes, then slice it. Toss everything together with the baby spinach, oranges, red onion, feta, and walnuts.
