Delicious Moroccan Chicken Salad With Blood Orange And Feta

Ingredients

– 4 chicken thighs, boneless and skinless
– 1 teaspoon ground cumin
– 1 teaspoon paprika
– 2 tablespoons olive oil
– 2 blood oranges, juiced and zested
– 100g feta cheese, crumbled
– 1 cup mixed salad greens
– 1/4 cup almonds, sliced
– Salt, to taste
– Pepper, to taste

Method

1. Preheat your grill or stovetop grill pan over medium heat.
2. In a bowl, mix cumin, paprika, olive oil, salt, and pepper. Add chicken to the bowl and coat well with the mixture.
3. Grill the chicken for about 5-7 minutes on each side until fully cooked. Let it rest for a few minutes after cooking.
4. In a large serving bowl, combine salad greens, blood orange juice, zest, feta cheese, and sliced almonds. Toss gently to mix.
5. Slice the grilled chicken and place it on top of the salad.
