Ingredients
– 2 cups all-purpose flour

Method
1. Preheat the oven to 180°C and line a muffin tray with paper cases.
2. In a large bowl, combine the flour, sugar, baking soda, cinnamon, and salt.
3. Add the vegetable oil and eggs to the dry ingredients. Mix until well combined.
4. Stir in the grated carrots, walnuts, and raisins until everything is evenly distributed.
5. Pour the batter evenly into the muffin cases and bake for about 20-25 minutes or until a toothpick comes out clean.
