Delicious Morequeta: Authentic Mexican Braised Pork And Rice Recipe

Ingredients

1. 1 kg pork shoulder, cut into cubes
2. 2 tbsp vegetable oil
3. 1 large onion, chopped
4. 4 cloves garlic, minced
5. 1 tsp dried oregano
6. 1 tsp ground cumin
7. 400 g canned tomatoes, crushed
8. 250 ml chicken broth
9. 1 cup rice
10. Salt and pepper, to taste

Method

1. Heat oil in a large pot over medium heat. Add the pork cubes and brown them on all sides.
2. Once browned, remove the pork and set it aside. In the same pot, add onion and garlic. Sauté until they are soft and fragrant.
3. Stir in oregano and cumin. Cook for an additional minute to release their flavors.
4. Add crushed tomatoes and chicken broth. Return the pork to the pot, season with salt and pepper, and let it simmer on low heat for about 1 hour.
5. After an hour, add the rice. Cover the pot and cook until the rice is tender and has absorbed the liquid.
