Delicious Molagooshyam: Easy Mixed Vegetable Lentil Curry Recipe

Ingredients

– 1 cup split yellow lentils
– 2 cups water
– 1 tablespoon vegetable oil
– 1 teaspoon cumin seeds
– 1 onion, chopped
– 1 tomato, chopped
– 1 carrot, diced
– 1 cup spinach, chopped
– 1 teaspoon salt
– 1 teaspoon turmeric powder

Method

1. Start by rinsing the lentils under cold water until the water runs clear.
2. In a pot, heat the vegetable oil over medium heat and add the cumin seeds. Let them sizzle for a few seconds.
3. Add the chopped onion and cook until it becomes translucent. Next, include the chopped tomato and cook until soft.
4. Stir in the diced carrot, chopped spinach, turmeric powder, salt, lentils, and 2 cups of water. Mix everything together.
5. Bring the mixture to a boil, then reduce the heat and let it simmer until the lentils and vegetables are tender, about 20 minutes.
