Ingredients
1 cup chopped carrots
1 cup diced potatoes
1 cup green beans, chopped
1 cup peas
1 medium onion, finely chopped
2 tablespoons oil
1 teaspoon mustard seeds
1 teaspoon urad dal
1 teaspoon turmeric powder
Salt to taste

Method
Heat the oil in a large pan over medium heat.
Add mustard seeds and wait until they start to crackle.
Stir in the urad dal and chopped onion, cooking until the onion is soft.
Mix in the turmeric, followed by carrots, potatoes, green beans, and peas.
Season with salt, cover the pan, and let the vegetables cook until tender.
