Ingredients

– 450g Brussels sprouts (trimmed and halved)
– 45ml olive oil
– 2 tablespoons miso paste
– 30ml maple syrup
– 15ml rice vinegar
– 1 teaspoon sesame oil
– Salt (to taste)
– Pepper (to taste)
– Sesame seeds (for garnishing)
– Spring onions (sliced, for garnishing)

Method

1. Preheat your oven to 220°C. Line a baking tray with baking paper for easy cleanup.
2. In a large bowl, toss the halved Brussels sprouts with olive oil, salt, and pepper until well coated.
3. Spread the seasoned Brussels sprouts evenly on the baking tray. Roast for about 20 minutes, or until they have a golden color.
4. While the sprouts are roasting, mix miso paste, maple syrup, rice vinegar, and sesame oil in a small bowl until smooth.
5. Drizzle the miso mixture over the roasted Brussels sprouts. Stir gently to combine, then return to the oven for an additional 5 minutes. Top with sesame seeds and sliced spring onions before serving.
