Ingredients
– 5 slices of bacon, chopped
– 200 g small frozen shrimp, thawed and chopped
– 1 onion, finely chopped
– 1 cup milk
– 4 eggs
– 1/2 cup shredded cheese
– 1/4 tsp salt
– 1/4 tsp pepper
– 1 package mini pastry shells
– Fresh parsley, for garnish
Method
1. Preheat the oven to 180°C (350°F). Grease a muffin tin or place mini pastry shells on a baking tray.
2. In a pan, cook the chopped bacon and onion over medium heat until the bacon is crispy and the onion is soft. Add the chopped shrimp and cook for another 2 minutes.
3. Whisk together the eggs, milk, salt, and pepper in a bowl. Stir in the cheese and the cooked bacon, onion, and shrimp mixture.
4. Spoon the egg mixture into the mini pastry shells, filling them about three-quarters full.
5. Bake in the preheated oven for 15 to 20 minutes, until the quiches are set and golden. Garnish with fresh parsley before serving.
