Ingredients
– 1 cup dried cranberries
– 1 cup dried cherries
– 1 cup mincemeat
– 1 packet store-bought shortcrust pastry
– 1 egg (beaten)
– ¼ cup brown sugar
– 1 teaspoon ground cinnamon
– 1 tablespoon lemon juice
– Icing sugar for dusting
– Zest of 1 lemon
Method
1. Preheat the oven to 190°C (375°F).
2. In a bowl, mix together cranberries, cherries, mincemeat, brown sugar, cinnamon, lemon juice, and lemon zest.
3. Roll out the shortcrust pastry and cut circles to fit in a muffin tray.
4. Fill each pastry circle with the fruit mixture.
5. Brush the edges with beaten egg and bake for 15-20 minutes or until golden brown.
