Ingredients

– 1 tablespoon taco seasoning
– 8 small flour tortillas

– 1/4 cup sour cream
– Fresh coriander, chopped (optional)
Method
1. Start by heating the cooked rice and shredded chicken in a pan over medium heat. Stir in the taco seasoning to combine.
2. Next, mix in the black beans and corn. Cook until everything is warmed through.
3. On each tortilla, place a scoop of the rice mixture. Add some cheese, salsa, and sour cream on top.
4. Carefully fold the sides of the tortilla over the filling and then roll it up tightly.
5. Serve your mini burritos warm, garnished with fresh coriander if desired.
