Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 400 g can of diced tomatoes
- 1 litre vegetable broth
- 1 can of white beans, drained
- 1 zucchini, diced
- 2 cups spinach leaves
Method
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and garlic, cooking until softened.
- Mix in the carrot and celery, stirring for another 5 minutes.
- Pour in the diced tomatoes and vegetable broth, then add the beans and zucchini.
- Once boiling, reduce heat and stir in the spinach until wilted.
