Delicious Milagu Kozhambu Recipe: Traditional South Indian Flavor

Ingredients

2 tablespoons black pepper
2 tablespoons cumin seeds
1 tablespoon coriander seeds
2 tablespoons oil
1 teaspoon mustard seeds
1 onion, finely chopped
2 dried red chilies
1 teaspoon turmeric powder
2 cups tamarind water
Salt to taste

Method

1. In a pan, dry roast the black pepper, cumin seeds, and coriander seeds until they become fragrant.
2. Allow the spices to cool, then grind them into a fine powder.
3. Heat the oil in a pot over medium heat, and add the mustard seeds. When they start to splutter, add the chopped onion and dried red chilies. Sauté until the onion is golden.
4. Mix in the turmeric powder and the ground spice mixture. Stir well to combine, then pour in the tamarind water. Add salt according to your taste.
5. Simmer the mixture for 10 to 15 minutes until thickened slightly.
