Ingredients
– 2 cups baby bitter gourd, chopped
– 1 medium onion, sliced
– 1 tablespoon cooking oil
– 1 teaspoon mustard seeds
– 1 teaspoon urad dal
– 1/2 teaspoon turmeric powder
– 1 teaspoon chili powder
– Salt to taste
– 2 tablespoons freshly grated coconut
– A few curry leaves
Method
1. Heat the cooking oil in a large pan over medium heat.
2. Add mustard seeds and let them pop before adding urad dal.
3. Sauté sliced onion until it becomes golden brown.
4. Stir in the chopped bitter gourd, turmeric powder, chili powder, salt, and curry leaves. Cook for about 10-12 minutes.
5. Lastly, mix in the grated coconut and cook for an additional 2 minutes before serving.
