Ingredients
– 1 cup long-grain rice
– 2 cups water
– 1 tablespoon olive oil
– 1 onion, chopped
– 2 cloves garlic, minced
– 1 teaspoon ground cumin
– 1 teaspoon ground coriander
– ½ teaspoon salt
– ½ teaspoon pepper
– ½ cup chopped parsley
Method
1. Begin by rinsing the rice under cold water until the water runs clear.
2. Heat olive oil in a pot over medium heat. Add onion and cook until soft, about 5 minutes.
3. Stir in garlic, cumin, coriander, salt, and pepper. Cook for another minute until fragrant.
4. Add the rinsed rice to the pot and mix well, coating it with the oil and spices.
5. Pour in water, bring to a boil, then reduce heat to low and cover. Cook for 15-20 minutes until rice is tender. Fluff with a fork and stir in parsley before serving.
