Ingredients

Method
1. Preheat the oven to 200°C (400°F). Grease a baking dish or cast-iron skillet.
2. In a large bowl, mix buttermilk and eggs together until fully combined.
3. In a separate bowl, combine cornmeal, flour, baking powder, baking soda, and salt. Stir well.
4. Add the dry ingredients to the wet mixture. Then, fold in corn, cheese, and onion.
5. Pour the batter into the prepared dish. Bake for 20 to 25 minutes or until golden brown.
