Ingredients
- 12 Medjool dates
- 1 cup nuts (almonds or walnuts)
- ½ cup dark chocolate chips
- 1 tablespoon coconut oil
- ½ teaspoon sea salt
- 1 teaspoon vanilla extract
- Optional: ¼ cup shredded coconut
- Optional: fresh fruit for garnish
Method
- Preheat the oven to 180°C (350°F).
- Cut the Medjool dates lengthwise and remove the pits.
- In a bowl, mix the nuts, chocolate chips, coconut oil, salt, and vanilla extract.
- Fill each date with the nut mixture and place on a baking tray.
- Bake for 10 minutes, and then let cool. Sprinkle with shredded coconut if desired.
