Ingredients
1 whole chicken (1.5 to 2 kg)
200 g feta cheese
150 g spinach, chopped
100 g sun-dried tomatoes, chopped
1 tablespoon olive oil
2 teaspoons dried oregano
1 teaspoon garlic powder
Salt, to taste
Pepper, to taste
Lemon wedges, for serving
Method
1. Preheat the oven to 180°C. Prepare a roasting pan with a little olive oil.
2. Mix chopped spinach, feta cheese, sun-dried tomatoes, oregano, garlic powder, salt, and pepper in a bowl.
3. Stuff the mixture into the cavity of the whole chicken. Tie the legs together with kitchen twine to keep the filling inside.
4. Place the stuffed chicken in the roasting pan. Brush the entire chicken with olive oil and season with additional salt and pepper.
5. Roast in the preheated oven for about 1 hour and 20 minutes or until the chicken is golden and cooked through. Serve with lemon wedges.
