Ingredients
– 300 g tortellini
– 1 can (400 g) diced tomatoes
– 1 cup spinach, chopped
– 1 cup bell pepper, diced
– 1 onion, chopped
– 2 cloves garlic, minced
– 1 tsp Italian seasoning
– 1 cup mozzarella cheese, shredded
– ½ cup parmesan cheese, grated
– Salt and pepper to taste
Method
1. Preheat the oven to 190°C.
2. Cook the tortellini according to the package instructions until al dente, then drain.
3. Sauté the onion, garlic, and bell pepper in a frying pan until softened.
4. Stir in the diced tomatoes, spinach, and Italian seasoning. Cook for about 5 minutes.
5. Mix the tortellini with the vegetable mixture, then transfer everything to a baking dish. Top with mozzarella and parmesan. Bake for 20 minutes until the cheese melts.
