Ingredients

– 4 medium potatoes, cut into cubes
– 2 cups cherry tomatoes, halved
– 1 cucumber, diced
– 1 red onion, chopped
– 1 bell pepper, chopped
– 1 cup feta cheese, crumbled
– 1/4 cup olive oil
– 2 tablespoons red wine vinegar
– 1 teaspoon dried oregano
– Salt and pepper to taste

Method

1. Preheat the oven to 200°C. Place the potato cubes on a baking tray and drizzle with olive oil.
2. Roast the potatoes in the oven for about 25-30 minutes until they are golden and crispy.
3. While the potatoes are cooking, prepare the salad by mixing cherry tomatoes, cucumber, red onion, and bell pepper in a large bowl.
4. Once the potatoes are done, let them cool slightly before adding to the salad.
5. Drizzle with red wine vinegar, sprinkle with oregano, and add crumbled feta. Season with salt and pepper to taste.
