Delicious Mediterranean Pasta Salad Recipe For Healthy Eating

Ingredients

  • 300 g pasta (penne or fusilli)
  • 1 red bell pepper, chopped
  • 1 cucumber, diced
  • 200 g cherry tomatoes, halved
  • 100 g feta cheese, crumbled
  • 100 g black olives, pitted and sliced
  • 60 ml olive oil
  • 30 ml balsamic vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste

Method

1. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water to cool it down.
2. In a large bowl, combine the chopped bell pepper, diced cucumber, halved cherry tomatoes, crumbled feta, and sliced olives.
3. Add the cooled pasta to the bowl with the vegetables and cheese.
4. In a small bowl, whisk together the olive oil, balsamic vinegar, oregano, salt, and pepper. Pour this dressing over the pasta salad.
5. Toss everything well until the pasta and vegetables are coated with the dressing. Serve immediately or chill for later.
