Ingredients
– 4 chicken thighs
– 1 tablespoon olive oil
– 1 onion, chopped
– 2 cloves garlic, minced
– 1 red bell pepper, sliced
– 1 can (400g) diced tomatoes
– 1 cup chicken broth
– 1 teaspoon dried oregano
– 1 teaspoon dried basil
– Salt and pepper to taste
Method
1. Heat the olive oil in a large pan over medium heat. Add the chicken thighs and brown them on both sides.
2. Remove the chicken from the pan and set aside. In the same pan, add the chopped onion and garlic. Cook until the onion is soft.
3. Next, add the sliced red bell pepper and cook for a few minutes until tender.
4. Stir in the diced tomatoes, chicken broth, oregano, basil, salt, and pepper.
5. Return the chicken to the pan, cover it, and simmer for 30 minutes until fully cooked.
