Ingredients

– 1 cup black beans, drained and rinsed

Method

1. Rinse the quinoa under cold water in a fine strainer.
2. Heat olive oil in a saucepan over medium heat.
3. Add onion and garlic; cook until softened, about 5 minutes.
4. Stir in bell pepper, corn, cumin, and paprika; cook for an additional 3 minutes.
5. Pour in vegetable broth, add quinoa and black beans. Bring to a boil, then reduce heat. Simmer covered for 15 minutes or until quinoa is fluffy.
