Ingredients
– 2 cups cooked brown rice
– 1 can (400g) black beans, drained and rinsed
– 1 cup corn kernels (fresh, frozen or canned)
– 1 red bell pepper, chopped
– 1 small onion, diced
– 2 cloves garlic, minced
– 2 teaspoons cumin powder
– 1 teaspoon paprika
– 1 tablespoon olive oil
– Fresh cilantro, for garnish
Method
1. Heat olive oil in a large pan over medium heat. Add onion and garlic, cooking until they soften.
2. Stir in chopped bell pepper and cook for another 3-4 minutes until tender.
3. Add the cooked brown rice, black beans, and corn to the pan. Mix well.
4. Sprinkle cumin and paprika over the mixture. Stir to combine all ingredients evenly and cook for 5 minutes.
5. Remove from heat and garnish with fresh cilantro before serving.
