Ingredients
1 large egg
1 tablespoon Dijon mustard
1 tablespoon white wine vinegar
1 cup vegetable oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon lemon juice
Method
Crack the egg into a bowl and add the Dijon mustard and white wine vinegar.
Using a hand mixer, blend the ingredients for about 30 seconds until smooth.
Slowly pour in the vegetable oil while continuing to mix until the mixture thickens.
Season with salt, black pepper, and lemon juice, then mix again for a few seconds.
Taste and adjust any flavors if desired, then store in a sealed container in the fridge.
