Method
1. Begin by washing the red-skinned potatoes. Cut them into even chunks for even cooking.
2. Place the potato pieces in a large pot and fill it with cold water. Add salt and bring it to a boil.
3. Cook the potatoes for about 15 minutes or until they are soft. You can test them by poking with a fork.
4. Drain the potatoes and return them to the pot. Then add the butter, milk, and sour cream.
5. Mash the potatoes until smooth. Stir in salt, pepper, and chopped chives for extra flavor.
