Ingredients
– 500g chicken breast, cut into bite-sized pieces
– 1 cup tortellini
– 1 tablespoon olive oil
– 2 cloves garlic, minced
– 400ml diced tomatoes
– 250ml cream
– 1 cup baby spinach
– 1 teaspoon Italian seasoning
– Salt, to taste
– Pepper, to taste
Method
1. Heat the olive oil in a large pan over medium heat. Add the minced garlic and cook until fragrant.
2. Add chicken pieces to the pan and cook until they are browned on all sides.
3. Stir in the diced tomatoes, cream, Italian seasoning, salt and pepper. Simmer for 5 to 7 minutes.
4. Add the tortellini and cook according to package instructions until tender.
5. Finally, stir in the baby spinach and cook until wilted before serving.
