Ingredients
1 medium melon, halved and seeds removed
1 tablespoon olive oil
1 tablespoon balsamic vinegar
1 tablespoon honey
1 pinch of salt
1 pinch of black pepper
2 tablespoons fresh mint, chopped
1/4 teaspoon red pepper flakes (optional)
1 lime, juiced
Method
Cut the melon into bite-sized pieces and place them in a bowl.
In a separate bowl, mix together the olive oil, balsamic vinegar, honey, salt, and black pepper.
Pour the dressing over the melon pieces and gently toss to coat.
Stir in the chopped mint and red pepper flakes if using.
Drizzle lime juice over the salad before serving.
