Ingredients
- 1 large mango, diced
- 1 medium pomelo, peeled and segmented
- ¼ cup sago pearls
- 400 ml coconut milk
- 1 cup water
- ¼ cup sugar
- Pinch of salt
- 2 tablespoons lemon juice
- Ice cubes (optional)
- Mint leaves for garnish
Method
- Start by cooking the sago pearls. Bring 1 cup of water to boil in a saucepan. Add the sago pearls and cook for about 10-12 minutes until they turn transparent.
- Rinse the cooked sago under cold water in a sieve. This helps to stop the cooking process. Set aside.
- Combine coconut milk, sugar, and a pinch of salt in a saucepan. Heat gently until the sugar dissolves. Stir in lemon juice and remove from heat.
- In a serving bowl, mix mango, pomelo, and sago together. Pour the coconut milk mixture over the top.
- Serve chilled with ice cubes if desired. Garnish with fresh mint leaves.
