Mango Corn Salsa with Black Beans
Ingredients
1 medium ripe mango, diced
1 cup corn kernels, fresh or canned
1 can (400 g) black beans, drained and rinsed
1 red bell pepper, diced
1 small red onion, finely chopped
1 jalapeño, seeded and minced
1/4 cup fresh cilantro, chopped
1 lime, juiced
Salt, to taste
Method
Combine the mango, corn, black beans, red bell pepper, and onion in a large bowl.
Add the minced jalapeño and cilantro to the mixture.
Squeeze the lime juice over the top, and sprinkle with salt.
Toss all ingredients until well combined.
Serve immediately or chill in the fridge for 30 minutes for better flavor.
