Delicious Mangalore Cucumber Sambar: Easy Southekayi Recipe

Ingredients

– 1 medium Mangalore cucumber
– 1 cup red lentils
– 1 medium onion
– 2 tomatoes
– 1 teaspoon mustard seeds
– 1 teaspoon turmeric powder
– 2 tablespoons tamarind paste
– 2 to 3 green chilies
– Salt to taste
– Fresh coriander leaves, for garnish

Method

1. First, cut the Mangalore cucumber into small cubes.
2. Rinse the lentils well and then boil them in 4 cups of water until soft.
3. In a pan, heat some oil and add mustard seeds. When they start to splutter, add chopped onions and green chilies.
4. Next, add chopped tomatoes, turmeric, and salt. Cook until the tomatoes become soft.
5. Combine the cooked lentils and cucumber cubes. Stir in tamarind paste and let it simmer for about 10 minutes. Garnish with fresh coriander before serving.
