Ingredients
– 2 cups cooked quinoa
– 1 can black beans, rinsed and drained
– 1 large avocado, diced
– 1 cup cherry tomatoes, halved
– 1 cup corn kernels
– 1 red bell pepper, diced
– 1/4 cup chopped fresh cilantro
– 1/4 cup lime juice
– 2 tablespoons olive oil
– Salt and pepper to taste
Method
1. Start by cooking the quinoa according to package directions, then let it cool.
2. Rinse and drain the black beans. Dice the avocado and bell pepper, and halve the cherry tomatoes.
3. In a large bowl, combine the cooked quinoa, black beans, avocado, tomatoes, corn, and bell pepper.
4. In a small bowl, mix lime juice, olive oil, salt, and pepper. Pour this dressing over the bowl with quinoa and veggies.
5. Toss everything together gently, and sprinkle with fresh cilantro before serving.
