Ingredients
– 1 cup green or brown lentils
– 1 ½ cups water
– 1 medium red bell pepper, diced
– 1 cup cherry tomatoes, halved
– 1 cucumber, diced
– 1 cup spinach, chopped
– ¼ cup red onion, finely chopped
– 2 tablespoons olive oil
– 2 tablespoons lemon juice
– Salt and pepper to taste
Method
1. Rinse the lentils under cold water and place them in a pot with the water. Bring it to a boil, then reduce the heat and let it simmer for about 20 minutes or until the lentils are tender.
2. While the lentils are cooking, chop the red bell pepper, cucumber, cherry tomatoes, spinach, and onion.
3. In a large bowl, combine the cooked lentils with the chopped vegetables.
4. Drizzle the olive oil and lemon juice over the mixture. Add salt and pepper based on your taste.
5. Stir everything together and serve your loaded lentil salad fresh.
