Ingredients
– 1 cup lentils
– 2 cups water
– 1 red bell pepper, diced
– 1 cucumber, diced
– 1 cup cherry tomatoes, halved
– 1 cup corn (canned or frozen)
– 1 small red onion, diced
– 100 g feta cheese, crumbled
– 2 tablespoons olive oil
– 1 tablespoon lemon juice
Method
1. Rinse the lentils under cold water.
2. In a medium pot, combine lentils and water. Bring to a boil, then reduce heat and simmer for about 20 minutes until tender. Drain and let cool.
3. While the lentils are cooking, chop the bell pepper, cucumber, cherry tomatoes, and onion.
4. In a large bowl, mix the cooled lentils with the prepared vegetables, corn, feta cheese, olive oil, and lemon juice. Stir gently to combine.
5. Serve immediately or chill in the fridge for a tasty salad later.
