Ingredients
4 large potatoes
1 cup chopped onion
1 cup shredded cheese
1 cup sour cream
4 cups chicken broth
1 cup milk
5 slices cooked bacon, chopped
1/4 cup chopped chives
Salt to taste
Pepper to taste
Method
Peel and chop the potatoes into small pieces.
In a large pot, sauté the onions until they are soft.
Add the chicken broth and potatoes. Cook until the potatoes are tender.
Use a masher to blend some of the potatoes, then stir in milk and sour cream.
Top the soup with cheese, bacon, chives, and season with salt and pepper before serving.
