Ingredients
1 cup (250 ml) all-purpose flour
1/4 cup (65 g) sugar
1 tablespoon baking powder
1/4 teaspoon salt
1/4 cup (60 g) cold unsalted butter, diced
1/2 cup (125 ml) buttermilk
Zest of 1 lime
Juice of 1 lime
1 large egg
1/4 cup (60 ml) heavy cream

Method
Begin by preheating the oven to 220°C (425°F). Line a baking sheet with parchment paper.

In a mixing bowl, combine the flour, sugar, baking powder, and salt. Mix these dry ingredients thoroughly.

Add the cold diced butter to the bowl. Use your fingers or a pastry cutter to incorporate the butter until the mixture resembles coarse crumbs.

Pour in the buttermilk, lime zest, lime juice, and the egg. Stir gently until everything is just combined and be careful not to over-mix.

Transfer the dough to a floured surface and pat it into a 2.5 cm thick round. Cut into wedges and place them on the prepared baking sheet. Brush the tops with heavy cream. Bake for 15 minutes or until golden brown.
