Ingredients
500 g plain flour
90 g sugar
2 tablespoons baking powder
1/2 teaspoon salt
75 g unsalted butter
1 cup buttermilk
1 tablespoon lime zest
1/4 cup lime juice
1 egg
Extra lime zest for garnish
Method
Preheat the oven to 220°C. Line a baking tray with parchment paper.
In a large mixing bowl, combine flour, sugar, baking powder, and salt.
Cut the butter into small pieces, then mix it into the dry ingredients until it resembles coarse crumbs.
Stir in buttermilk, lime zest, lime juice, and egg until a soft dough forms.
Turn the dough onto a floured surface. Shape it into a round, about 2.5 cm thick. Cut circles and place them on the baking tray. Bake for 15 minutes or until golden brown. Top with extra lime zest when serving.
