Ingredients
– 2 cups plain flour
– 3 tablespoons sugar
– 1 tablespoon baking powder
– 1/2 teaspoon salt
– 75 g cold unsalted butter, cubed
– 1 tablespoon lime zest
– 1/2 cup milk
– 1 large egg
– 1 tablespoon lime juice
– Extra sugar for sprinkling
Method
1. Preheat your oven to 220°C (428°F). Line a baking tray with parchment paper.
2. In a large bowl, combine the flour, sugar, baking powder, and salt. Stir well.
3. Add the cold butter to the dry ingredients and mix until the mixture resembles coarse crumbs.
4. In another bowl, whisk together the milk, egg, lime zest, and lime juice. Pour this mixture into the flour mixture and stir until just combined.
5. Turn the dough onto a floured surface, shape it into a round about 2.5 cm thick, and cut it into wedges. Place the wedges on the prepared tray and sprinkle with extra sugar. Bake for 12-15 minutes until golden.
