Lentil and Sausage Soup Recipe

Ingredients
1 tbsp olive oil
1 onion, diced
2 garlic cloves, minced
1 carrot, chopped
1 stick celery, chopped
2 tsp dried thyme
400 g lentils, rinsed
1.5 L vegetable or chicken broth
4 sausages, sliced
2 cups chopped kale or spinach

Method
1. Heat olive oil in a large pot over medium heat. Sauté onion, garlic, carrot, and celery for about 5 minutes until softened.
2. Stir in dried thyme and cook for another minute to release the flavor.
3. Add lentils and broth to the pot, then bring to a boil. Reduce the heat and simmer for about 20 minutes, until lentils are tender.
4. While the soup simmers, cook the sliced sausages in a separate pan until browned.
5. Stir the cooked sausages and chopped kale or spinach into the soup. Simmer for another 5 minutes before serving.
