Lemon Pound Cake Recipe
Ingredients
250 g unsalted butter, softened
2 cups granulated sugar
4 large eggs
3 cups all-purpose flour
1 cup milk
1 tablespoon baking powder
1 teaspoon vanilla extract
1 teaspoon lemon zest
1/4 teaspoon salt
1 cup lemon juice
Method
Preheat the oven to 175°C. Grease and flour a loaf pan.
Mix the softened butter and sugar together using an electric mixer until the mixture is light and fluffy.
Add the eggs one by one, beating well after each addition.
In another bowl, combine the flour, baking powder, and salt. Gradually add this dry mix to the wet ingredients, alternating with the milk.
Stir in vanilla, lemon zest, and lemon juice until all is well combined, then pour the batter into the prepared loaf pan.
