Lemon Curd Cake Recipe

Ingredients
170 g unsalted butter, softened
1 cup sugar
3 large eggs
2 cups all-purpose flour
1 tablespoon baking powder
1 cup milk
1 cup lemon curd
1 teaspoon vanilla extract
1/4 teaspoon salt
Powdered sugar for dusting

Method
1. Preheat the oven to 175°C. Grease and flour a 9-inch round cake pan.
2. In a mixing bowl, cream together the butter and sugar until fluffy.
3. Beat in the eggs one at a time, then add the vanilla extract.
4. Combine flour, baking powder, and salt in another bowl. Gradually mix this dry mixture with the butter mixture, alternating with the milk until smooth.
5. Stir in the lemon curd until well blended. Pour the batter into the prepared pan and bake for 30-35 minutes. Let cool before dusting with powdered sugar.
