Ingredients

– 200 g digestive biscuits, crushed
– 100 g unsalted butter, melted
– 400 g cream cheese, softened
– 200 ml sour cream
– 150 g sugar
– 3 eggs
– 1 lemon, zested and juiced
– 1 teaspoon vanilla extract

Method

1. Preheat the oven to 160 degrees Celsius.
2. Combine the crushed biscuits and melted butter in a bowl. Press the mixture into the bottom of a springform pan.
3. Beat the cream cheese, sour cream, and sugar together until smooth. Add in the eggs one at a time while mixing.
4. Stir in the lemon zest, lemon juice, and vanilla extract until well combined.
5. Pour the cream cheese mixture over the biscuit base. Bake for 45-50 minutes or until set. Allow cooling, then refrigerate for a few hours before serving.
