Lemon Cake Recipe
Ingredients
1 cup unsalted butter, softened
1 cup sugar
4 large eggs
2 cups plain flour
1 tsp baking powder
1/2 tsp salt
1/2 cup milk
1/4 cup lemon juice
Zest of 1 lemon
Icing sugar for dusting
Method
Preheat the oven to 180°C (350°F) and grease a cake pan.
In a large bowl, cream the softened butter and sugar together until light and fluffy.
Add the eggs one at a time, mixing well after each addition.
Combine flour, baking powder, and salt in a separate bowl, then gradually stir this mixture into the butter mixture.
Finally, add the milk, lemon juice, and lemon zest. Mix until smooth and pour into the prepared cake pan. Bake for 30-35 minutes or until golden brown.
