Ingredients
- 2 cups cooked turkey, shredded
- 1 tablespoon oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tablespoon curry powder
- 1 can (400 ml) coconut milk
- 1 cup chicken broth
- 1 tablespoon soy sauce
- 1 cup frozen peas
- Salt and pepper to taste
Method
- Heat oil in a large pan over medium heat.
- Add the chopped onion and minced garlic. Cook until the onion is soft.
- Stir in the curry powder and cook for another minute.
- Pour in the coconut milk and chicken broth. Add the shredded turkey and soy sauce, then stir everything well.
- Mix in the frozen peas. Simmer for 10 minutes, then season with salt and pepper as needed.
