Ingredients
– 500 g leftover turkey, chopped
– 1 onion, diced
– 2 garlic cloves, minced
– 1 tablespoon curry powder
– 400 ml canned coconut milk
– 100 g frozen peas
– 1 red bell pepper, chopped
– 2 tablespoons vegetable oil
– Salt to taste
– Fresh coriander (cilantro) for garnish
Method
1. Heat the vegetable oil in a large skillet over medium heat.
2. Add the diced onion and cook until soft, about 5 minutes.
3. Stir in the minced garlic and curry powder, cooking for another minute.
4. Pour in the coconut milk and add the chopped turkey, red bell pepper, and peas. Simmer for 10 minutes.
5. Season with salt and garnish with fresh coriander before serving.
